Irish Potato cakes

Irish Potato Griddle Cakes.

Boxty Recipes

2 cups grated raw potatoes

2 cups  leftover mashed potatoes

2 cups of flour

2 tsp  baking powder

2 tsp salt  – Ground pepper to taste

2 eggs, beaten

1/4 – 1/2 cup milk (more or less as needed)

1 Tbsp butter or oil (more or less as needed)

1. Mix together the grated raw potatoes.

2.Sift together the flour, baking powder, salt and pepper,then add to the potatoes. Stir in the beaten egg, mixing thoroughly.

3.Add milk until it makes a batter.
4. Drop by the tablespoonful onto a hot buttered griddles and cook over moderate heat until browned (3 to 4 minutes per side). serve hot with butter or applesauce.

Potato Field of P.E.I. There was just  beautiful field after field, row after row of beautiful potatoes – yes, I say beautiful because it was fields of lovely flowers and you could smell their scent as you drove by!!

Mariah Quack Quack - A lot of my toys are inspired by my grandchildren.

Meet “Mariah Quack – Quack”.  I find inspiration for a lot of my toys from my collection of vintage patterns and also from my grandchildren. I prefer to use quality materials so that my toys will become heirloom, for both my grandchildren and yours.

Tasha never truly left childhood and its winged dreams behind. If you try to discover her fountain of youth, she calmly explains that her imagination never faded. Her favorite injunction …..  “Use your imagination”.

As I create toys I feel Tasha’s inspiration.

Tasha’s Hand made wool yarn pom-pom Rabbits. I would love to try my hand at making some wool yarn pom-pom toys……. someday!! “I just sculpt the yarn….., there’s nothing to it really” Tasha insist.     Hmmm, I hope it’s that easy.

Hmmm, I wonder if it would really be that easy for the rest of us!

I love preparing food and eating at home. It’s such a nice atmosphere – no banging of dishes, loud voices from people you have never meet, you know who ate from the dishes before you;-) AND you know exactly what is in your food!


I do get a lot of inspiration from my vintage cookbooks – I love looking at the old photos!

There are days though that I just do not have time or desire to cook, so I prepare larger amounts than I need at one meal and refrigerate or freeze enough for another meal. Dan ate these for about three days. I do this with a lot of foods especially – soup / stews, vegetables, casseroles. I keep salads made a head. Then you always have something ready – on hand – then you are not tempted to grab fast foods. Why would you want fast foods when you can have delicious homemade  that is so much tastier and better for you!!

Brrr- It’s Winter in Florida

It’s been a little chilly in Florida the past few days – so it’s a good time to make some soup- I believe anytime is a good time for a nice bowl of soup 😉

Irish Celebrations

Being Irish, I find the best way to start March is with a comforting bowl of  Potato Vegetable soup, a good book about Ireland and knitting of a baby hat – of course!!.

                                   Florida winter foot wear =                                                              What else but Socks and flip-flops and the sock must match the flip-flops or at least coordinate. Okay – I may be seen donning these around the house — But not out an about anywhere, not even Walmart – if I were to ever go there!


Birkenstocks and Socks

Now Birkenstocks and socks (especially Maggie’s organic cotton socks,Thank you Dan) are “good to go” just about anywhere, but especially when shopping at Sunseed (our local Health food store).
